Yvonne  was a wonderful variety a few years back, and one of the first to show that wonderful flat water lily form - see how much Monet Glow took from this variety in its first year, but the following year the form reverted to an open decorative - perhaps bought about by extra nourishment, or a better environment. So even how we treat the plant, and eventually the bloom influences the type of flower we end up with? Now to pick Oliver's Feast to bits - considering it wasn't much different than Monet Glow in its seedling year, but what happened in it second year? It's my guess somewhere along the way this flowers descendents had been influenced by a cactus type bloom which was waiting in the wings to altered the DNA.
